Chocolate Chip Sourdough Bars – Long Island Weekly


Nontraditional baked goods using sourdough are gaining popularity for their unique flavors and health benefits. Sourdough, a naturally fermented dough, can enhance recipes like chocolate chip bars, pancakes, and muffins. The fermentation process breaks down gluten, making sourdough easier to digest and more suitable for those with gluten sensitivities. OK, if you aren’t already on the homesteading bandwagon and making your own, there are dozens of people across Long Island, many of them are your neighbors; they are sourdough fanatics and they are willing to sell, trade and even give you starter.

Talk it up amongst friends, ask in your mommy groups, on your Facebook Buy Nothing group, on the Facebook group dedicated to all things sourdough baking on Long Island, in your work cafeteria. Or when all else fails, start your own sourdough starter for a literally, endless baking experience.

Chocolate chip sourdough bars (Christy Hinko)

Ingredients
3/4 c unsalted butter, melted
1 c light brown sugar
1/2 c granulated sugar
2 eggs
2 tsp vanilla extract
1 c sourdough starter, unfed
2-1/4 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 c chocolate chips or chunks
1 c walnuts, chopped (optional)

Instructions
Preheat oven to 350 degrees. Line a 9”x13” baking pan with parchment paper.
In a large bowl, combine melted butter, brown sugar and granulated sugar. Stir until well-mixed. Add eggs and vanilla extract, mixing until fully incorporated. Stir in sourdough starter.

In a separate bowl, whisk together flour, baking soda and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chip and walnuts (if using). Spread batter evenly into prepared baking pan.

Bake for 30 minutes or until toothpick inserted into center comes out clean.
